So exactly what are the good fats? They go by the name of essential fatty acids (EFAs). These are fats that must be derived from your diet because the body cannot produce them. Not only does the typical American diet not get near enough of these good fats, but the ratio of these good fats are also abormal. Omega-6 fatty acids and omega-3 fatty acids are considered the most important EFAs. The typical American diet has a ratio of around 20:1 omega-6mega-3. The ideal relationship should be between 1-3:1. Thus not only is consuming an adequate level of EFAs important, but also the ratio of the two EFAs is also just as important. Sources of omega-6 fatty acids include nuts, legumes, and vegetable oils. Sources of omega-3 fatty acids include deep-water fish and some vegetable oils.
